The Pickle Project blast their herbs and spices with ultrasound before making the brine, a process that draws out more flavour, faster, resulting in a pickle liquor that is complex, deeply aromatic and, by their own admission, incredibly drinkable. The pickles themselves are crisp cucumber chips with a clean dill and garlic character, bright with spirit vinegar and lifted by herb and spice extracts. The kind of pickle that makes you realise most pickles have been selling themselves short.
