This rich, glossy sauce combines plums, tamarind, molasses and brown rice miso into a deeply savoury, sweetly complex base, then lifts it with both fresh garlic and heat-aged black garlic for a flavour that is unmistakably its own. Black garlic brings a soft, caramelised sweetness with notes of fig and molasses, adding a quiet depth that rounds out the sauce beautifully.
