Black Bean &
Mushroom Burger
Serves: 4 Time: 50 min Level: Easy
Ingredients
- 250g mushrooms, finely chopped
- olive oil 1 tablespoon
- 300g black beans
- 1 small onion, finely chopped
- Gherkin, finely chopped
- Tomato ketchup
- Mayo
- 2 garlic cloves, minced
- 1 tsp ground cumin
- 1 tsp smoked paprika
- 1 tsp ground coriander
- 1 tsp chilli flakes
- Salt & pepper, to taste
Method
- Heat 1 tbsp olive oil in a pan. Sauté mushrooms with salt for 8-10 min until the liquid evaporates. Cool slightly.
- Add the mushrooms and the cooked black beans to an oven tray and roast at 170°C for 20 min, just to dehydrate them both slightly.
- In a large bowl, mash black beans and mushrooms together, leaving some chunks for texture. Season to taste, then shape into 4-6 patties. Chill for at least 30 mins to firm up.
- For the burger sauce, in a bowl, mix chopped onion and gherkin. Add ketchup and mayo. Stir in ground cumin, ground coriander, chilli flakes, smoked cayenne and grated garlic. Season to taste.
- Pan-fry burger patties in a little olive oil 4-5 min per side until crisp and browned, or bake at 200°C for 20-25 min, flipping once.
- Serve in buns topped with burger sauce, lettuce, tomato and gherkins.
