This Organic Zambian Forest Clear Honey hails from rural beekeepers in NW Zambia, with whom Wainwright’s have cultivated partnerships since 1983. Nestled in traditional bark hives, wild bees thrive amidst the nectar-rich flora of the Miombo forest. Cold-pressed to preserve its natural pollen, this honey exudes a distinct, earthy flavour profile. By supporting the honey business, they empower thousands of rural beekeepers, offering them a stable income source. Although not considered ‘raw’ Wainwrights do not pasteurise their honey but warm it gently, for as little time as possible, to around 40-45C, similar to the temperature of a hive. This is simply to enable the move from storage containers, through a filter, and then into jars or tubs for sale. They use minimal filtration, using a coarse 200 microns sieve. This leaves the pollen grains in the honey, one reason that their honey tastes so good.
