Clearspring Organic Barley Miso, also known as Mugi Miso, is the traditional miso of rural Japan, made using age-old methods. Fully aged in cedarwood kegs for 1 to 2 years, this superb miso offers a rich flavour and concentrated goodness. A live product, it may cause the lid to bulge due to ongoing fermentation – this is perfectly normal and safe to consume. Harmless white yeasts may develop from exposure to air; simply skim them off.
