Heather honey has a very distinctive flavour of heather and is exceptionally aromatic, which results from its many essential oils in the nectar and pollen of Heather flowers. In a liquid form it has an rubin-amber colour and a bit jelly-like consistency which is quite unusual for honey. After crystallisation it becomes orange ,sometimes dark brown and has a fine- grained consitency.
