Made from pure soya beans and crafted using traditional methods passed down through five generations of miso artisans, this miso is aged in large cedarwood kegs for up to three years. The result? A dark, rich miso that’s not only packed with flavour but also boasts twice the protein of other misos like Brown Rice or Barley Miso. As a live product, Hatcho Miso may cause the lid to bulge during fermentation – this is perfectly normal and safe to consume. Harmless white yeasts may develop from exposure to air; simply skim them off.
