Rolled bark from the cinnamon tree, Cinnamon Quills (also known as Cinnamon Sticks) are an excellent addition to poaching syrups as well as to savoury and spicy dishes such as a chilli or stew. Add a quill when cooking basmati rice or couscous for a subtle flavour that the ground version of the spice cannot match.
