Smooth, subtle and surprisingly versatile. This is teff flour’s softer side. Wholegrain white teff is milder than its brown cousin, but still brings plenty to the table, with a light, slightly sweet flavour and a soft, fine texture. Perfect for gluten free baking, it works beautifully in breads, muffins and sponge cakes. Or go classic with Ethiopian-style injera , just mix, ferment and cook low and slow. It’s gentle, but not shy. A brilliant base for everyday baking with a little twist.
