Ume Su is a traditional Japanese seasoning with a rich history, dating back to the Edo Period in the 1600s. This unique vinegar-like tanginess is becoming more popular worldwide, adding depth and complexity to a wide variety of dishes. Made by carefully pickling Umeboshi plums with red Perilla leaves, Clearspring Organic Ume Su enhances salads, dips, vegetables, dressings, and even makes an intriguing secret ingredient in cocktails. Produced sustainably on a mountain farm in Japan’s Wakayama prefecture, this authentic seasoning is made from Umeboshi trees that are not grafted, some of which are over 70 years old. The farm’s new trees are grown from the very best ume plums and left to mature for at least 5 years before being harvested. Naturally grown, organic, and vegan—this Ume Su brings an authentic, complex flavour to any dish.
